| Cod Fish Cakes2 cups of cooked salt cod flaked
3 cups mashed potatoes
1/4 cup grated onion
1/8 tsp pepper
1 beaten egg
Soak salted cod fish according to directions on wooden box.
Cook in small amount of water until white and flakes
Mix all the above ingredients together and make into 3/4 inch cakes.
When ready to fry dip each cake in beaten egg and roll in very fine cracker crumbs.
Can either be deep fried or pan friend until golden brown
Sit back and enjoy between crackers
